Yield: 25 meathalls
Ingredients:
2 T garlic, chopped
½ each onions, diced
4 sprigs Rosemary, minced
1 egg
1 1/2 cup heavy cream
1lb ground pork
1lb ground veal or beef
1lb sweet Italian sausage, removed from casings
1 1/2 cup grated Parmigiano Reggiano
In a medium sized sauté pan, heat the olive oil over medium heat. Cook the garlic. onions, and
rosemary, until the vegetable has softened, about 5 minutes. Remove from the pan and cool
completely. Working slowly, fold the remaining ingredients together just until the meat comes together
Return to the fridge for 15 minutes to firm the mixture.
Working then quickly, roll the meatballs into silver dollar sized portions, about 2 oz each.
At this point. vou mav choose to either saute the meatbals on al sides to brown them or in
the oven for 15 minutes at 450F
When browned. reserve until readv to finish in the sauce.
