This sausage has a wonderful sweet flavor from the natural wild boar meat and brown sugar. Wild boar doesn’t have that gamey flavor you might find from other traditional game sausage. We like them paired with eggs and Blackstone Potatoes but you can also use them for a classic sausage sandwich.

Ingredients for Wild Boar Sausage

You don’t need too much to make this delicious sausage.

Wild Boar – One pound of ground wild boar is plenty. It is slightly darker than pork because there is less fat. But it does have enough fat to keep the sausage moist without having to add more fat or other meat to it.

Seasoning Mix – I like to make wild boar sausage with seasoning that has more of a breakfast sausage profile. Brown Sugar, sea salt, black pepper, nutmeg, and thyme are the perfect combination for this sausage.

Steps for Making Wild Boar Sausage Recipe

Step One: In a mixing bowl, add the wild boar along with the spices.

Step Two: Form the seasoned wild boar meat into patties that are roughly 2-3 ounces. You should get 8 patties from 1 pound of ground boar.

Step Three: Place the sausage patties in a preheated smoker and smoke for an hour at 225°F until the internal temperature reaches 150°F.

Cooking Note: If you don’t have a smoker, you can easily grill, bake, or pan-sear them over medium heat. Just cook them until the internal temp reaches 150°F.

Step Four: Once the wild boar sausage is done cooking, serve it alongside your favorite brunch dishes. Eggs and homefries are perfect to accompany this smoked Wild Boar Sausage.

Variations

Make it into links – you can use natural casings to turn these into lean wild boar sausage links. I just prefer to make patties to save on time, but you can make links.

Combine Meats – If you want to mix wild boar with some other natural meats like venison or elk, the same way you might mix in pork, you can do that easiest with a meat grinder. Just regrind the meat together to mix it in thoroughly.

Flavor Profile – it is easy to move this from breakfast sausage to more savory flavors. Try adding roasted garlic and rosemary along with salt and pepper for a delicious combination.

Add-ins – Mix in some dry cranberries or dry apples for a sweeter sausage.

Ingredients

  • 1 lbs ground wild boar
  • 1 tsp salt

Instructions
